Mouth chatter?

I have 3 cats. Can you explain to me why it is that whenever they spot a bird, their mouths do this very unusual chattering movement, and their teeth make a very low noise? Thank you! Ken.

There are different theories on why cats chatter at prey. The adrenaline rush and excitement, frustration that the cat can't get to the birds if it's behind a window, the anticipation of the hunt, and mimicking the sound of their prey have all been offered up as possible explanations.
