Why has behavior changed in my 4 year old adopted cat?

Hi! I adopted a 4-year-old female. She is very shy and hid for a while, but then she let me groom and pet her quite freely. Now that she is more comfortable in the house and runs all over, playing and happy, she no longer lets me touch her AT ALL. What's up with that?
